Ingredients
Cookies
- 1 batch prepared sugar cookies (see note 1)
Frosting
- 1 (8-ounce) package cream cheese, full-fat, brick-style, softened
- 5 tablespoons unsalted butter, at room temperature
- 2-1/4 cups powdered sugar, divided
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Topping
- Fresh fruit and berries (e.g., strawberries, blueberries, kiwi, raspberries)
- 1/3 cup apricot preserves
- 2 teaspoons water
Instructions
- Prepare Sugar Cookies: Bake your favorite sugar cookie recipe or use a prepared batch, ensuring the cookies are completely cooled to room temperature before decorating.
- Make Frosting: Soften the cream cheese by microwaving in 15–20 second intervals until it is room temperature but not melted. Using a stand mixer with a whisk attachment or a hand mixer, beat together softened cream cheese and butter on medium speed until smooth. Add vanilla extract and salt, mixing to combine. Gradually add 2 cups of powdered sugar at low speed until well integrated and smooth. Taste and if desired, add the remaining 1/4 cup powdered sugar for a thicker or sweeter frosting. Refrigerate the frosting for 20–30 minutes to firm it slightly and blend the flavors.
- Decorate Cookies: Spread an even layer of frosting over each cooled sugar cookie.
- Arrange Fruit: Artistically place fresh fruit and berries atop the frosted cookies to create vibrant, colorful designs.
- Glaze Fruit: In a small microwave-safe bowl, combine apricot preserves and water. Microwave for 10–15 seconds and stir until smooth. Optionally, strain if using marmalade to remove seeds or pulp. Using a pastry brush, gently coat the fruit with the warm glaze to add shine and sweetness.
- Serve or Store: Serve the fruit pizzas immediately or cover and refrigerate them. Store in the refrigerator and consume on the same day for best freshness and texture.
Notes
- Use your preferred sugar cookie recipe or store-bought dough, but ensure cookies are flat and evenly baked for easy frosting.
- For softer frosting, do not overheat cream cheese; it should be softened, not melted.
- The apricot glaze preserves the fresh fruit’s appearance and adds a subtle sweetness.
- These fruit pizzas are best enjoyed the same day they are made to maintain cookie texture and fruit freshness.
- Feel free to customize toppings with seasonal fruits or berries based on availability.
