Delight in these refreshing and healthy sugar-free popsicles made with just three natural ingredients—fresh berries, lemon juice, and a powdered monk fruit sweetener blend. Perfect for a guilt-free treat during warm weather, these popsicles are easy to make, naturally sweetened, and require minimal prep time.

  • Total Time: 6 hours 5 minutes
  • Yield: 6 servings

Ingredients

Ingredients

  • 3 cups Fresh berries (blueberries, raspberries, strawberries, and/or blackberries)
  • 1/4 cup Lemon juice
  • 1/3 cup Water (or coconut water)
  • 1/3 cup Besti Powdered Monk Fruit Allulose Blend (or more to taste)

Instructions

  1. Blend Ingredients: Combine the fresh berries, lemon juice, water (or coconut water), and powdered monk fruit blend into a blender. Blend until the mixture becomes smooth. Taste and adjust the sweetness by adding more sweetener if desired.
  2. Pour into Molds: Carefully pour the blended mixture into popsicle molds. Insert popsicle sticks into each mold and cover the molds if covers are available to prevent ice crystals and spills.
  3. Freeze: Place the molds in the freezer and let them freeze until completely solid, which will take at least 6 hours or preferably overnight for best results.
  4. Unmold Popsicles: To remove the popsicles from the molds easily, run the molds under warm water for a few seconds to loosen them, then gently pull the popsicles out.

Notes

  • Use a mix of berries to add complexity of flavor and color to your popsicles.
  • If you don’t have Besti Monk Fruit Sweetener, you can substitute with any other powdered monk fruit or erythritol-based sweetener.
  • Water can be replaced with coconut water for added electrolytes and flavor.
  • Adjust sweetness to preference depending on the tartness of your berries.
  • Ensure popsicles are frozen completely before serving to avoid melting.
