Ingredients
Fresh Tomato Mix
- 10oz / 300g ripe tomatoes (grape, cherry, or roma tomatoes)
- 1 small garlic clove (or 2 for extra garlic flavor)
- Big handful of fresh basil leaves
- 3 tablespoons extra virgin olive oil
- Salt and black pepper to taste
Pasta
- 6oz / 170g spaghettini pasta or classic spaghetti
Optional Garnish
- Grated parmesan cheese
- Additional fresh basil leaves
Instructions
- Prepare the Tomatoes and Basil: Dice the ripe tomatoes into small cubes and place them in a large bowl. Ensure that the tomatoes are ripe for the best juicy flavor.
- Mix Aromatics and Seasoning: Chop the basil leaves finely. Grate the garlic cloves using a microplane grater and add them to the bowl with tomatoes. Pour in the extra virgin olive oil, season well with salt and black pepper, and stir the mixture gently to combine everything evenly.
- Marinate the Tomato Mixture: For optimal flavor, cover the bowl and refrigerate for 30 to 60 minutes. If short on time, allow the mixture to marinate for at least 10 minutes while cooking the pasta to help blend the flavors.
- Cook the Pasta: Boil the spaghettini pasta in a large pot of salted water according to package instructions until al dente. Reserve about 2 tablespoons of the pasta cooking water before draining the pasta.
- Toss Pasta with Tomato Mixture: Drain the pasta and immediately add it to the bowl containing the marinated tomatoes. Add the reserved pasta water and gently toss the pasta to coat it with the tomato juices and olive oil dressing.
- Allow Pasta to Absorb Flavors: Set the bowl aside for 10 minutes allowing the pasta to soak in the flavorful tomato juice. If preferred, this pasta can be served cold by covering and refrigerating at this stage or served at room temperature.
- Serve and Garnish: Serve the fresh summer pasta in bowls. Optionally sprinkle with grated parmesan cheese and garnish with extra fresh basil leaves to enhance flavor and presentation. Enjoy immediately.
Notes
- Use ripe, juicy tomatoes for the best flavor; grape, cherry, or roma all work well.
- Adjust garlic quantity based on your preference for stronger or milder garlic flavor.
- Reserving pasta water is important to help bind the sauce to the pasta.
- This dish can be served warm, at room temperature, or chilled as a pasta salad.
- For a dairy-free option, omit the parmesan garnish.
