Instructions
- Prepare the Orange Cream Dressing: In a separate bowl, beat one large egg and set aside. In a saucepan, combine the fresh orange juice and sugar. Heat over medium heat, then whisk in the beaten egg. Cook the mixture, stirring constantly, until it thickens and reaches a bubbling boil. Remove from heat and let the orange cream cool completely before using.
- Whip the Cream: In a large bowl, whip the whipping cream until soft peaks form. Add the vanilla extract to the whipped cream and mix gently to combine.
- Combine Cream and Orange Dressing: Once the orange cream has fully cooled, gently fold it into the whipped cream mixture. Be careful not to overmix in order to maintain a light and airy texture.
- Prepare the Fruit: Peel the mangoes and dice them into small, bite-sized pieces. Dice the nectarines into similar-sized pieces, peeling if preferred. Combine both types of diced fruit in a separate bowl.
- Fold Fruit into Cream Mixture: Just before serving, gently fold the mixed diced fruit into the orange cream and whipped cream mixture using a spatula, ensuring the mixture remains light and airy.
- Serve: Serve the Summer Fruit Fool in individual dessert glasses, a large serving bowl, or pack into small mason jars, ideal for summer picnics and gatherings.
Notes
- Make sure the orange cream is completely cooled before folding it into the whipped cream to prevent melting or loss of volume.
- You can peel nectarines based on personal preference; the skins add texture and color.
- This dessert is best served chilled and is perfect for warm summer days.
- Use fresh, ripe fruits for the best flavor and sweetness.
- If desired, the sugar amount can be adjusted depending on the sweetness of the fruit.
