A vibrant and refreshing Sweet & Spicy Carrot Ribbons Salad featuring thinly peeled carrot ribbons tossed with a zesty marinade of jalapenos, garlic, lime, and maple syrup. Garnished with crunchy pistachios and fresh parsley, this quick and easy salad offers a perfect balance of sweet, tangy, and spicy flavors, ideal for a healthy side dish or light snack.

  • Total Time: 10 minutes plus 1-2 hours chilling time
  • Yield: 6 servings

Ingredients

Carrot Ribbons

  • 1 lb large carrots

Marinade

  • 2 jalapenos, sliced and seeded
  • 2 cloves garlic, peeled and grated
  • 2 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tbsp lime juice
  • 2 tsp maple syrup (or honey)

Garnish

  • 1/4 cup chopped pistachios
  • 1/4 cup chopped parsley
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Prepare Carrot Ribbons: Wash the carrots thoroughly and trim off the ends. Use a vegetable peeler to slice the carrots into long, thin ribbons. It’s okay if the ribbons vary in width. Place all the ribbons into a medium-sized bowl.
  2. Add Marinade Ingredients: Drizzle the olive oil, lime juice, white vinegar, and maple syrup over the carrot ribbons, ensuring the liquids are evenly distributed across the ribbons.
  3. Add Fresh Garlic: Peel the garlic cloves and finely grate them using a microplane or press them with a garlic press directly over the bowl of carrots. This ensures the garlic flavor is evenly incorporated into the salad.
  4. Add Jalapenos: Slice the jalapenos into thin rounds, carefully removing the seeds to control the spice level. Add the slices to the bowl with the carrots and marinade.
  5. Add Pistachios and Parsley: Roughly chop the pistachios and fresh parsley, then sprinkle them over the bowl for added texture and flavor.
  6. Season and Toss: Sprinkle the sea salt and ground black pepper over all ingredients. Toss everything gently but thoroughly to coat each carrot ribbon evenly with the marinade and mix in the garlic, jalapenos, pistachios, and parsley.
  7. Marinate and Chill: Cover the salad and refrigerate for at least 1-2 hours or overnight to allow the flavors to meld and the carrots to soften slightly. Serve chilled for best taste.

Notes

  • Removing jalapeno seeds reduces heat; keep some seeds if you prefer spicier salad.
  • Salad can be made a day ahead and stored in the refrigerator to enhance the flavors.
  • Use maple syrup for a vegan option instead of honey.
  • For uniform carrot ribbons, use a sharp vegetable peeler and rotate carrot as you peel.
  • Substitute pistachios with toasted walnuts or almonds for variety.
