Ingredients
Fruits
- 1 14 ounce (400 grams) Can of Pineapple Chunks (drained, juice reserved, diced small)
- 1 1/4 cups (200 grams) Large Mango (diced small)
Vegetables & Herbs
- 1 1/4 cups (155 grams) Red Bell Pepper (diced small, about 1 medium bell pepper)
- 1/2 cup (60 grams) Red Onion (diced small, about 1/4 red onion)
- 1/3 cup (60 grams) Serrano Peppers (minced, remove ribs and seeds if desired for less spice, or substitute one fat jalapeno)
- 1/3 cup (15 grams) Cilantro (chopped fine)
Others
- 2 tablespoons Fresh Lime Juice (from about 2 limes)
- 1/4 + 1/8 teaspoon Fine Sea Salt (add more to taste)
- 1 tablespoon Reserved Pineapple Juice
Instructions
- Combine Ingredients: To a medium mixing bowl, add the pineapple chunks, diced mango, red bell pepper, red onion, minced serrano peppers, chopped cilantro, fresh lime juice, fine sea salt, and the reserved pineapple juice. Gently fold the ingredients together to evenly mix while keeping the fruit and vegetables intact.
- Rest and Marinate: If time allows, cover and refrigerate the salsa for at least 30 minutes to let the flavors meld and intensify. Before serving, taste and adjust the salt and spice if needed to your preference.
- Serve: Serve the salsa chilled as a zesty condiment or as a dip paired with tortilla chips for a delicious snack or appetizer.
- Store Properly: Store leftover salsa in a lidded container in the refrigerator and consume within three days for optimal freshness and flavor.
Notes
- For less heat, remove the ribs and seeds from the serrano peppers or substitute with a milder jalapeno pepper.
- Allowing the salsa to rest enhances the flavor blend but it can be served immediately if needed.
- Use fresh lime juice for the best citrus flavor in this salsa.
- This salsa is best consumed within three days for freshness.
- Great as a topping for grilled fish, chicken, or tacos, beyond just serving with chips.
