Ingredients
Seasoned Beef
- 1 lb. 85/15 ground beef
- 1 teaspoon granulated garlic
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
Chipotle Sour Cream
- 1 cup sour cream
- 1 tablespoon chipotle hot sauce
- ¼ teaspoon cayenne pepper
Other Ingredients
- 1 cup cooked Spanish rice (about one pouch pre-cooked)
- 3 cups shredded cheddar jack cheese, divided
- 1 cup red tortilla strips
- 2-3 tablespoons olive oil
- 4 extra large burrito tortillas
Instructions
- Prepare the seasoned beef: Heat a large nonstick skillet over medium heat. Add the ground beef and break it up as it cooks. Sprinkle granulated garlic, chili powder, salt, and pepper evenly over the beef. Cook until the beef is fully browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
- Make the chipotle sour cream: In a small bowl, mix together sour cream, chipotle hot sauce, and cayenne pepper until well combined. Set aside.
- Assemble the burritos: In a large bowl, combine ¼ pound of the cooked seasoned beef, ¼ cup chipotle sour cream, ¼ cup cooked Spanish rice, ½ cup shredded cheddar jack cheese, and ¼ cup red tortilla strips. Fold all the ingredients together until evenly mixed. Place the mixture in the center of each large burrito tortilla. Fold in the sides of the tortilla and roll it tightly to form a burrito.
- Cook the burrito (part 1): Reheat the large nonstick skillet over medium-high heat. Add 1-2 teaspoons of olive oil and allow it to become fragrant. Pour ¼ cup shredded cheddar jack cheese in a line down the center of the pan. Place the burrito directly on top of the cheese line.
- Cook the burrito (part 2): Carefully place a heavy cast iron skillet on top of the burrito to weigh it down. Let it cook for 3-4 minutes, until the cheese melts and begins to brown, creating a grilled cheesy crust.
- Flip and cook the other side: Remove the cast iron skillet and carefully flip the burrito over. Cook for an additional 2-3 minutes until the second side is browned and crispy. Remove the cooked burrito from the skillet.
- Repeat and serve: Repeat steps 3 through 6 with the remaining assembled burritos. Let each burrito rest for 1 minute before serving to allow flavors to settle and cheese to set slightly.
Notes
- Use a heavy cast iron skillet to press the burrito for best cheesy crust results.
- Make sure the ground beef is cooked through before assembling the burritos.
- Feel free to adjust the amount of chipotle hot sauce in the sour cream for your preferred spice level.
- Extra shredded cheese can be used to garnish the burritos after cooking for added cheesiness.
- This recipe can be doubled easily for a larger crowd.
