Ingredients
Meat and Seasoning
- 1 pound ground beef or ground turkey
- 1 (1 ounce) package taco seasoning
- 1 (10 ounce) can of tomatoes with green chilies, undrained
Beans and Vegetables
- 1 (15 ounce) can refried beans
- 1 (15 ounce) can corn, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
Dairy
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
Other
- 10-12 corn tortillas
- Cooking spray
Instructions
- Preheat Oven: Set your oven to 350°F to prepare for baking the casserole.
- Cook Meat: In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease to keep the dish from being too oily.
- Add Seasoning and Tomatoes: Stir in the undrained tomatoes with green chilies and the taco seasoning, mixing well until the seasoning dissolves.
- Simmer Mixture: Let the meat mixture simmer until all liquid evaporates, about 6 minutes, then remove from heat and set aside.
- Prepare Beans and Corn: Drain and rinse the black beans and corn thoroughly. Open the can of refried beans and set aside.
- Prepare Baking Dish: Lightly spray a 9×13-inch casserole dish with cooking spray to prevent sticking.
- Layer Tortillas: Begin the casserole by laying down 4-6 corn tortillas as the base layer, depending on the size of the dish.
- Add Fillings: Layer in the following order: refried beans, taco meat mixture, corn, black beans, sour cream, then shredded cheddar cheese.
- Repeat Layers: Continue layering tortillas and fillings until all ingredients are used up.
- Bake: Place the casserole in the preheated oven and bake for 30 minutes until heated through and cheese is melted and bubbly.
- Cool and Serve: Remove from oven and let cool for 5 minutes before slicing. Top with your favorite garnishes such as avocado slices, diced tomatoes, and fresh cilantro.
Notes
- You can substitute ground turkey for ground beef to reduce fat content.
- For a spicier dish, add chopped jalapeños or a dash of hot sauce to the meat mixture.
- Use flour tortillas if corn tortillas are not available, but corn tortillas offer a more authentic flavor.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
- Consider serving with a side of Mexican rice or a fresh green salad for a complete meal.
