Taco Meatballs are a quick and flavorful dinner option that combines classic taco seasoning with juicy ground beef meatballs. Ready in just 30 minutes, they’re perfect for busy weeknights, taco-themed meals, or served as a tasty appetizer at gatherings.

  • Total Time: 30 minutes
  • Yield: 12 servings

Ingredients

Meatball Mixture

  • 6 tablespoons taco seasoning (or 2 packets)
  • 2 tablespoons tomato paste
  • 1/4 cup green chiles, chopped
  • 2 large eggs
  • 3/4 cup plain breadcrumbs
  • 1/4 cup cilantro, chopped
  • 2 pounds ground beef (85/15)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and spray a 9×13-inch baking dish with vegetable oil spray to prevent sticking.
  2. Mix Seasoning: In a large bowl, whisk together the taco seasoning, tomato paste, chopped green chiles, eggs, plain breadcrumbs, and chopped cilantro until the mixture is well combined and evenly mixed.
  3. Combine with Beef: Gently fold the ground beef into the bowl with the seasoning mixture. Mix just enough to combine without overworking the meat.
  4. Form Meatballs: Roll the mixture into 1-inch meatballs, ensuring they are evenly sized for consistent cooking, and place them in the prepared baking dish spaced slightly apart.
  5. Bake Meatballs: Bake the meatballs in the preheated oven for 20 to 22 minutes, or until they are cooked through and golden on the outside.

Notes

  • Make sure not to overmix the meat mixture to keep meatballs tender.
  • Serve with rice, chips, avocado, jalapeños, and pickled onions for a complete taco-inspired meal.
  • Can be made ahead and reheated for quick meals later in the week.
  • Use ground turkey or chicken as a leaner alternative if desired.
