Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 white or yellow onion, diced
- 1 large red bell pepper, sliced into bite-size pieces
- 2 medium carrots, sliced into bite-size pieces
- 4 cloves garlic, minced
- 2 tablespoons grated or minced fresh ginger
- 1-2 tablespoons Thai red curry paste, to taste
- 4 cups chicken stock
- 1 (1-pound) bag frozen potstickers
- 1 (15-ounce) can full-fat coconut milk
- 2 large handfuls fresh baby spinach
- 2 tablespoons fresh lime juice
Garnishes
- Chopped fresh cilantro
- Lime wedges
Instructions
- Sauté Vegetables: Heat olive oil in a large stockpot over medium-high heat. Add the diced onion, sliced red bell pepper, and sliced carrots. Sauté for 6 to 7 minutes, stirring occasionally, until the vegetables are nearly tender. Add the minced garlic, grated fresh ginger, and Thai red curry paste, then continue to sauté for 3 more minutes, stirring frequently to develop the flavors.
- Simmer Broth: Pour in the chicken stock and stir well to combine all ingredients. Increase the heat and bring the soup to a boil, allowing the flavors to meld together.
- Cook Potstickers and Add Coconut Milk: Add the frozen potstickers directly into the boiling soup and stir to distribute. Pour in the full-fat coconut milk, add fresh baby spinach, and stir gently until the spinach wilts and the potstickers are cooked through and tender, about 5 to 7 minutes.
- Season to Taste: Taste the broth and adjust the seasoning as needed. Add more red curry paste for heat, salt, pepper, or lime juice to balance the flavors according to your preference.
- Serve and Garnish: Ladle the soup into bowls and garnish generously with chopped fresh cilantro and lime wedges for an extra citrusy kick. Serve immediately and enjoy this warm, comforting Thai delicacy.
Notes
- Adjust the amount of Thai red curry paste according to your preferred spice level.
- You can substitute chicken stock with vegetable stock for a vegetarian version, but use vegetarian potstickers to keep it fully vegetarian.
- For a lighter soup, use light coconut milk instead of full-fat.
- If fresh spinach isn’t available, baby kale or other leafy greens can be substituted.
- This soup is best enjoyed fresh but can be refrigerated and reheated within 2 days.
- For extra protein, add cooked shredded chicken or tofu before serving.
