A vibrant and healthy Thai-inspired Buddha bowl featuring tender sweet chili chicken, fluffy quinoa, fresh crunchy vegetables, and sweet pineapple, all tossed with a flavorful sweet chili dressing and garnished with toasted sesame seeds and fresh herbs.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Grains & Liquids

  • 1 cup quinoa
  • 1 3/4 cups water (or coconut milk)

Vegetables & Fruits

  • 3 cups (packed) kale, massaged
  • 2 cups bean sprouts
  • 1 cup carrot, shredded
  • 2 cups pineapple, sliced
  • 1 cup red pepper, sliced
  • 1 cup red cabbage, sliced

Protein

  • 1 pound cooked chicken, shredded or sliced

Dressing & Garnishes

  • 1 cup sweet chili dressing
  • 1 tablespoon sesame seeds, toasted
  • 1/4 cup green onions, sliced
  • 2 tablespoons cilantro, chopped

Instructions

  1. Cook the Quinoa: In a medium saucepan, bring the water or coconut milk and quinoa to a boil. Reduce heat to low, cover, and simmer until the quinoa is tender and has absorbed all the liquid, about 15-20 minutes. Remove from heat and let it sit, covered, for 5 minutes. Then fluff with a fork and allow it to cool slightly.
  2. Prepare the Salad Components: While the quinoa cooks, massage the kale to soften it, shred the carrot, slice the red pepper and red cabbage, and slice the pineapple. Combine these vegetables and fruit in a large mixing bowl along with the bean sprouts.
  3. Assemble the Buddha Bowls: Once the quinoa is ready and slightly cooled, distribute it evenly into serving bowls. Top each bowl with the massaged kale, mixed vegetables, pineapple, and the cooked shredded or sliced chicken.
  4. Add Dressing and Garnishes: Drizzle the sweet chili dressing over each bowl to taste. Sprinkle with toasted sesame seeds, sliced green onions, and chopped cilantro for added flavor and texture.
  5. Serve: Toss everything gently if desired and serve immediately to enjoy a fresh, sweet, and tangy Thai Sweet Chili Chicken Buddha Bowl.

Notes

  • To save time, use pre-cooked rotisserie chicken or leftover chicken.
  • For a dairy-free and richer flavor, use coconut milk instead of water for the quinoa.
  • Massage the kale with a little olive oil and salt to soften the texture.
  • Feel free to customize the bowl by adding avocado slices or other favorite vegetables.
  • Make extra dressing to serve on the side if you like your bowls more saucy.
