Ingredients
Dry Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
Wet Ingredients
- 1 cup unsalted butter, at cool room temperature
- 1 3/4 cups granulated sugar
- 1 large egg plus 1 large egg yolk
- 1 tablespoon pure vanilla extract
For Rolling
- 1/2 cup granulated sugar
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a large baking sheet with a Silpat baking mat or parchment paper to prevent sticking and set aside.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and baking powder until combined. Set aside for later incorporation.
- Cream Butter and Sugar: Using a stand mixer fitted with the paddle attachment, beat the unsalted butter on medium speed for about 1 minute. Add 1 3/4 cups granulated sugar and continue beating for 2 to 3 minutes until the mixture is light and fluffy. Pause once to scrape down the sides of the bowl to ensure even mixing.
- Add Eggs and Vanilla: Add the large egg, egg yolk, and pure vanilla extract to the butter mixture. Mix until well combined and smooth.
- Combine Dough: Slowly add the dry ingredient mixture to the wet mix, blending on low speed until just combined. The dough may look crumbly initially but will come together nicely.
- Shape and Coat Cookies: Pour the remaining 1/2 cup granulated sugar into a small bowl. Form the dough into balls using about 2 tablespoons per cookie. Roll each dough ball thoroughly in the sugar coating and place them onto the prepared baking sheet, spacing each about 2 inches apart.
- Bake: Bake for 10 to 14 minutes, checking closely from the 10-minute mark. The cookies are ready when the bottoms turn light golden brown and cracks start to form on the surface. Avoid overbaking to keep them soft and chewy.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Store: Store cooled cookies in an airtight container for up to 3 days, or freeze in a freezer-safe bag or container for up to 3 months.
Notes
- Make sure the butter is at cool room temperature for easy creaming.
- Checking cookies early during baking is essential since oven temperatures may vary.
- Do not overbake as this will make the cookies less soft and chewy.
- Using a Silpat or parchment paper prevents sticking and makes cleanup easier.
- Freezing baked cookies extends their freshness for up to 3 months.
