Ingredients
Main Ingredients
- 3 large bananas (400g), the riper the better
- 1/2 cup creamy peanut butter (120g)
- 3 cups rolled oats (240g)
- 1/2 cup protein powder (62g), optional
- 1 tsp vanilla extract, optional
- 2 Tbsp chocolate chips (30g)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper to prevent sticking and ensure easy removal of the bars.
- Mash and Mix Wet Ingredients: In a bowl, mash the ripe bananas thoroughly with a fork until smooth. Stir in the creamy peanut butter, protein powder (if using), and vanilla extract until the mixture is well combined.
- Add Oats and Chocolate Chips: Fold the rolled oats into the wet mixture, ensuring even distribution. If adding chocolate chips, mix in half of them now to disperse throughout the batter.
- Transfer to Baking Dish: Spread the oat mixture evenly into the prepared baking dish. Sprinkle the remaining chocolate chips on top for a gooey finish.
- Bake: Bake in the preheated oven for 18-22 minutes, or until the bars are set and lightly golden around the edges.
- Cool and Slice: Remove from the oven and allow the bars to cool completely in the baking dish. For firmer bars and enhanced flavor melding, refrigerate overnight before slicing into 9 bars.
- Serve: Enjoy warm or chilled. For an added protein boost and sweetness, serve with Greek yogurt and a drizzle of honey topped with banana slices.
Notes
- Use very ripe bananas for the best natural sweetness and moisture.
- Protein powder is optional but recommended for increased protein content.
- Refrigerating the bars overnight helps them firm up and enhances their flavor.
- Bars keep well in an airtight container in the fridge for up to 5 days.
- Chocolate chips can be omitted or substituted with nuts or dried fruit for variations.
