Delicious and creamy tiramisu-inspired overnight oats perfect for a quick, flavorful breakfast. This recipe layers cocoa-infused oats with a coconut yogurt mascarpone for a satisfying, coffee-flavored treat that requires minimal prep and no cooking.

  • Total Time: 4-8 hours (mostly chilling time)
  • Yield: 2 servings

Ingredients

Overnight Oats

  • 1 cup oats (quick oats or old fashioned oats)
  • 3 tbsp unsweetened cocoa powder + more to decorate
  • 1½ tbsp chia seeds
  • Pinch of salt
  • 3 tbsp espresso or brewed coffee (equiv. 2 espresso shots), cooled
  • 1¼ cups unsweetened almond milk (or other non-dairy milk, like soy)
  • 2½ tbsp pure maple syrup
  • 1¼ tsp vanilla extract

Mascarpone Layer

  • 1 cup coconut yogurt (or yogurt of choice)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine oats, cocoa powder, chia seeds, and a pinch of salt until evenly mixed.
  2. Add Liquids: Pour in the cooled espresso or brewed coffee, almond milk, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract reserved from total. Stir thoroughly to ensure all dry ingredients are fully moistened.
  3. Refrigerate Oats: Transfer the oat mixture to an airtight container and refrigerate for 4 to 8 hours, allowing the oats and chia seeds to soften and absorb the flavors.
  4. Prepare Mascarpone: In a small bowl, mix together the coconut yogurt with the remaining ½ tablespoon maple syrup and ¼ teaspoon vanilla extract until smooth and well combined.
  5. Layer the Oats and Mascarpone: Remove the oats from the fridge, then divide half of the oat mixture between two glass or mason jars. Add a layer of the mascarpone mixture on top, then repeat layering with the remaining oats and mascarpone in the same jars, creating two layers of each.
  6. Garnish and Serve: Sift additional cocoa powder over the top of each jar and, optionally, decorate with coffee beans for an authentic tiramisu touch. Serve immediately or keep refrigerated until ready to eat.

Notes

  • You can substitute any non-dairy milk you prefer, such as soy or oat milk.
  • Use quick oats for a softer texture or old fashioned oats for a bit more chew.
  • Adjust sweetness by varying the amount of maple syrup to taste.
  • For a vegan option, ensure the yogurt used is plant-based as with coconut yogurt.
  • Chilling time can be extended overnight or up to 12 hours for convenience.
  • Decorate with chocolate shavings or crushed biscotti for added texture.
