This Ultimate Vegetable Lentil Loaf is a hearty and nutritious plant-based meal perfect for a comforting dinner. Baked to perfection, this loaf offers a wholesome, gluten-free alternative to traditional meatloaf and pairs beautifully with a variety of classic sides.

  • Total Time: 1 hour 45 minutes
  • Yield: 8 servings

Ingredients

Lentil Base

  • 1 cup dry lentils (green or brown)
  • 2 1/2 cups vegetable broth

Flax Egg Binder

  • 3 tablespoons flaxseed meal (ground flaxseeds)
  • 1/3 cup water

Vegetables & Sauté

  • 2 tablespoons olive oil OR steam sauté using 1/4 cup water
  • 3 garlic cloves, minced
  • 1 small onion, finely diced
  • 1 small red bell pepper, finely diced
  • 1 carrot, finely diced or grated
  • 1 celery rib, finely diced

Dry Ingredients

  • 3/4 cup oats (gluten-free oats recommended)
  • 1/2 cup oat flour or finely ground oats (or any flour of choice)

Seasonings

  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 – 1 teaspoon cumin (optional)
  • 1/4 – 1/2 teaspoon ground chipotle pepper (optional)
  • Cracked pepper, to taste
  • Sea salt, to taste

Glaze

  • 3 tablespoons organic ketchup
  • 1 tablespoon apple cider vinegar or balsamic vinegar
  • 1 tablespoon pure maple syrup

Instructions

  1. Prepare lentils: Rinse lentils to remove any debris. In a large pot, combine lentils with 2 1/2 cups vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 35–40 minutes, stirring occasionally. Allow lentils to cool uncovered for about 15 minutes; they will thicken slightly. Do not drain the liquid.
  2. Preheat oven: Set oven to 350°F (175°C) to prepare for baking the loaf.
  3. Make flax egg: In a small bowl, mix the flaxseed meal with 1/3 cup water. Allow it to sit for at least 10 minutes, preferably chilling it in the refrigerator. This mixture will thicken and serve as a plant-based binder.
  4. Sauté vegetables and spices: Heat olive oil or use 1/4 cup water in a sauté pan over medium heat. Add minced garlic, diced onion, bell pepper, carrot, and celery. Cook for about 5 minutes until softened. Stir in dried thyme, garlic powder, onion powder, cumin, chipotle pepper, salt, and cracked black pepper. Remove from heat and let cool slightly.
  5. Mash the lentils: Using an immersion blender, food processor, fork, or potato masher, blend about three-quarters of the lentil mixture until mostly smooth but still retaining some texture. For ease, tilt the pot for immersion blending. Leave one-quarter of lentils whole to maintain loaf structure.
  6. Assemble lentil loaf: In a large bowl, combine the sautéed vegetables and spices with the mashed lentils, remaining whole lentils, oats, oat flour, and the prepared flax egg. Mix thoroughly. Adjust seasoning with additional salt, pepper, or herbs as desired. Press the mixture firmly into a parchment-lined 9×5-inch loaf pan, ensuring edges are compacted.
  7. Prepare and apply glaze: In a small bowl, whisk together ketchup, apple cider or balsamic vinegar, and maple syrup until well combined. Spread the glaze evenly over the top of the lentil loaf for a flavorful finish.
  8. Bake the loaf: Place loaf pan in the center of the preheated oven. Bake for 45–50 minutes until the top is set and slightly golden. Remove from the oven and allow to cool before slicing to maintain loaf integrity.
  9. Serve: Slice into 8 servings. This lentil loaf pairs wonderfully with sides such as asparagus, green beans, Brussels sprouts, mashed or roasted potatoes, sautéed kale, baked beans, macaroni salad, or a simple green salad for a complete meal.

Notes

  • The flax egg binds the ingredients without using eggs, making this loaf vegan.
  • Using gluten-free oats and oat flour ensures the loaf is gluten-free; any flour alternative can be substituted depending on dietary needs.
  • Adjust spices and seasonings to taste; adding cumin and chipotle pepper is optional but adds depth.
  • The glaze can be thinned with a teaspoon of water if too thick or adjusted with more vinegar or maple syrup according to preference.
  • Letting the loaf cool before slicing helps it hold together better.
  • Serve with a variety of classic sides to enhance the meal experience.
