A flavorful and quick Tofu Cabbage Stir Fry recipe that combines crispy tofu with tender shredded cabbage in a savory soy-based sauce. Perfect for a healthy and satisfying vegetarian meal ready in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Sauce

  • 1 tbsp light (regular) soy sauce
  • 1 tbsp dark soy sauce (or an extra tablespoon of regular soy sauce)
  • 1 tbsp rice wine vinegar
  • 2 tsp maple syrup or sugar
  • 1/2 tbsp sesame oil
  • 1/2 tsp vegetable bouillon paste or 1/2 a crushed vegetable bouillon cube

Stir Fry

  • 1-2 tbsp avocado oil
  • 4 scallions, sliced with whites and greens separated
  • 1 red chili pepper, sliced (optional)
  • 4 cloves garlic, crushed or grated
  • 1/2 inch ginger, grated or minced
  • 1, 450g block of super firm tofu (or extra firm tofu, pressed and drained)
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 2 cups green cabbage, shredded

Instructions

  1. Prepare the sauce: In a small bowl, whisk together light soy sauce, dark soy sauce, rice wine vinegar, maple syrup (or sugar), sesame oil, and vegetable bouillon until well combined. Set aside.
  2. Sauté aromatics: Heat a large skillet over medium heat and warm the avocado oil. Add the white parts of the scallions and sliced red chili pepper if using. Sauté until scallions begin to soften, about 2 minutes. Add the crushed garlic and grated ginger, sautéing for another minute until fragrant.
  3. Cook the tofu: Crumble the pressed tofu directly into the skillet. Sprinkle smoked paprika and ground coriander over the tofu. If the pan seems dry, add a bit more avocado oil to coat the tofu evenly with the spices. Continue sautéing and stirring the tofu for 3-5 minutes until lightly browned and cooked through.
  4. Add the cabbage: Stir in the shredded green cabbage and continue to stir fry for about 4 minutes, until the cabbage starts to soften but remains slightly crisp.
  5. Combine with sauce: Pour the prepared sauce over the tofu and cabbage mixture. Stir well to evenly distribute the sauce. Cook for another 2-3 minutes until the tofu and vegetables have absorbed the flavors.
  6. Serve: Remove from heat and serve warm, optionally garnished with the green parts of the scallions. This dish goes well over steamed rice or noodles.

Notes

  • Press and drain tofu well before cooking to achieve better texture.
  • Adjust the chili pepper according to your spice preference or omit for mild flavor.
  • For extra protein, you can add cooked edamame or other beans.
  • Use avocado oil or other high smoke-point oil for best sautéing results.
  • This recipe is vegetarian but ensure soy sauce and bouillon are halal or kosher if needed.
