Ingredients
Vegetables and Herbs
- 10 ounces cherry or grape tomatoes
- 1 medium shallot, finely diced
- 3 cloves garlic, minced
- 1/2 cup fresh basil, chopped
Pantry and Canned Goods
- 2 tablespoons olive oil
- 15 ounce can butter beans (including liquid)
- 1/2 teaspoon truffle salt (or regular salt, more as desired)
- 1/4 teaspoon ground black pepper (more as desired)
- 2 tablespoons vegan cream cheese
Instructions
- Preparation: Finely dice the shallot, mince the garlic, and chop the fresh basil. Using a garlic press is recommended for mincing the garlic efficiently.
- Heat the oil and cook tomatoes: Add the olive oil to a pan and heat over medium heat. Once hot, add the cherry tomatoes, salt, and pepper. Stir to combine.
- Burst the tomatoes: Cook the tomatoes over medium heat for 5-8 minutes until they burst open and release their juices. If needed, use a spatula to gently press the tomatoes to help them release liquid.
- Add shallots and garlic: Incorporate the diced shallots and minced garlic into the tomatoes. Cook and stir together for about 3 minutes until fragrant and softened.
- Add butter beans and simmer: Pour in the entire can of butter beans including the liquid. Stir to combine and bring the mixture to a simmer. Let it cook for about 5 minutes to reduce some liquid and allow flavors to meld.
- Incorporate vegan cream cheese: Add the vegan cream cheese to the pan and stir thoroughly until fully mixed and the sauce is creamy.
- Add fresh basil and season: Turn off the heat and stir in the chopped fresh basil. Adjust seasoning with additional salt and pepper to taste.
- Serve: Remove from heat and serve warm with a big slice of toasted bread. Enjoy your comforting Tomato Basil Butter Beans!
Notes
- Do not strain the liquid from the butter beans can; it adds creaminess to the dish.
- Truffle salt adds a gourmet touch but regular salt works perfectly as well.
- You can use any small variety of tomatoes like grape or cherry tomatoes.
- For a non-vegan version, you can substitute vegan cream cheese with regular cream cheese or mascarpone.
- Serve immediately for the best texture and flavor.
