Ingredients
For the French Fries:
- 1 Package frozen French fries
- 2 Tablespoons Cajun seasoning, or to taste
- Ranch dressing, to serve
For the Cheese Sauce:
- 3 Tablespoons butter
- 2 Tablespoons all-purpose flour
- 1 Cup milk
- 1 Cup cheddar cheese, shredded
- 1 Cup pepper jack cheese, shredded
- Chili powder, optional
Optional Toppings:
- Jalapeños, sliced
- Bacon bits
- Green onions, sliced
- Hot sauce
Instructions
- Cook the Fries: Prepare the frozen French fries according to the package instructions using your preferred method—baking, air frying, or deep frying—until crispy and golden brown. Once cooked, sprinkle the fries evenly with Cajun seasoning and toss well to coat. Set aside while you prepare the cheese sauce.
- Make the Cheese Sauce: While the fries are cooking, melt the butter in a medium saucepan over medium heat. Whisk in the all-purpose flour and cook for 1 to 2 minutes until the mixture forms a golden, bubbly roux. Gradually whisk in the milk, stirring constantly to prevent lumps. Continue cooking and stirring the mixture for 3 to 5 minutes until it thickens. Remove from heat and stir in the shredded cheddar and pepper jack cheeses until melted and smooth. If you like extra heat, add a pinch of chili powder and mix well.
- Assemble the Dish: Transfer the seasoned fries to a warm serving platter. Generously drizzle the warm cheese sauce over the fries. Drizzle ranch dressing over the cheese sauce or serve it on the side for dipping. Add any optional toppings you desire such as sliced jalapeños, bacon bits, green onions, and a splash of hot sauce. Serve immediately to enjoy warm, cheesy, spicy fries.
Notes
- Use homemade fries for an extra fresh taste or your favorite frozen brand.
- Adjust Cajun seasoning and chili powder amounts to control the spiciness.
- For a thicker cheese sauce, reduce milk slightly or add an extra tablespoon of flour when making the roux.
- Keep cheese sauce warm while assembling to prevent it from firming up.
- Customize toppings based on preference, such as adding chopped tomatoes or olives.
