  • Total Time: 1 hour
  • Yield: 32 bite-sized sausage rolls (serves 8)

Ingredients

Turkey Apple Sausage Rolls

  • 2 tablespoons butter
  • ½ cup finely chopped onion
  • 2 cups peeled and finely chopped Honeycrisp apple
  • 2 tablespoons maple syrup
  • 1 pound ground turkey
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 teaspoon fresh thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried sage
  • ½ teaspoon ground fennel
  • ¼ teaspoon nutmeg
  • 17.3 ounces puff pastry (2 sheets)
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 2 tablespoons toasted sesame seeds

Apple Mustard Sauce

  • 3 tablespoons stone ground mustard
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Sauté Onion and Apple: Melt 2 tablespoons of butter in a large sauté pan over medium heat. Add the finely chopped onion and peeled, chopped Honeycrisp apple, cooking them until softened, about 4 to 5 minutes. Remove the pan from the heat and stir in 2 tablespoons of maple syrup. Set aside half of this mixture to cool completely.
  3. Prepare Apple Mustard Sauce: Using the reserved half of the sautéed onion and apple mixture, combine it in a blender with 3 tablespoons stone ground mustard, 1 tablespoon Dijon mustard, 1 tablespoon maple syrup, and 1 tablespoon apple cider vinegar. Puree the mixture until smooth to create a tangy apple mustard sauce. Set aside.
  4. Make the Turkey Filling: Once the sautéed apple and onion mixture has cooled, place it in a large bowl and mix with 1 pound ground turkey, ½ cup breadcrumbs, 1 large egg, 1 teaspoon fresh thyme, 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon dried sage, ½ teaspoon ground fennel, and ¼ teaspoon nutmeg. Mix until all ingredients are well combined, then divide the filling into 4 equal portions.
  5. Prepare Puff Pastry Rolls: Cut the 2 sheets of puff pastry lengthwise in half, creating 4 long strips. Shape each portion of the turkey filling into logs the same length as the puff pastry strips. Place one log at the bottom edge of each puff pastry strip. Brush the edges of the pastry with the egg wash (1 beaten egg with 1 tablespoon water) and carefully roll the pastry over the filling, sealing the edges by gently pressing down.
  6. Slice and Prepare for Baking: Cut each rolled log into 8 bite-sized pieces, approximately 1 inch wide, yielding a total of 32 mini sausage rolls. Place them seam-side down on the prepared baking sheet. Brush the tops of the mini rolls with the egg wash and sprinkle with 2 tablespoons toasted sesame seeds for added flavor and texture.
  7. Bake the Sausage Rolls: Bake in the preheated oven for 20 to 25 minutes or until the puff pastry is golden brown and fully cooked. Remove from the oven and let the rolls cool slightly.
  8. Serve: Serve the warm turkey apple sausage rolls alongside the prepared apple mustard sauce for dipping. Enjoy as a flavorful appetizer or snack.

Notes

  • You can substitute the Honeycrisp apple with other sweet and firm apples like Fuji or Gala if unavailable.
  • Ensure the sautéed apple and onion mixture is fully cooled before mixing with the ground turkey to prevent cooking the egg prematurely.
  • For a crispier crust, use puff pastry sheets that are well chilled before assembling.
  • These sausage rolls can be assembled ahead of time and baked just before serving.
  • The apple mustard sauce can be stored separately in the refrigerator for up to 3 days.
