Ingredients
Main Ingredients
- 1 tbsp Olive oil
- 6 cloves Garlic (minced)
- 1 cup Heavy cream
- 1/3 cup Chicken broth, reduced sodium
- 3/4 cup Grated Parmesan cheese
- 1 1/2 lb Boneless skinless chicken breasts
- 1 tbsp Italian seasoning
- 1 tsp Sea salt
- 1/4 tsp Black pepper
- 1/2 cup Sun-dried tomatoes (chopped)
- 2 cups Fresh spinach (chopped, packed)
Instructions
- Sauté garlic: Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Prepare cream sauce: Add the heavy cream and chicken broth to the saucepan. Bring to a gentle simmer, then reduce the heat to medium-low and simmer for about 10 minutes. The sauce will be slightly thin but thick enough to coat the back of a spoon.
- Season chicken: While the sauce simmers, place the chicken breasts in the bottom of your slow cooker. Season the chicken evenly with the Italian seasoning, sea salt, and black pepper. Top the chicken with the chopped sun-dried tomatoes.
- Finish sauce: Once the sauce has thickened slightly, turn the heat to low. Gradually whisk in the Parmesan cheese, adding 1/4 cup at a time until the sauce is smooth. Taste and adjust salt if needed.
- Combine chicken and sauce: Pour the prepared sauce evenly over the chicken in the slow cooker, trying to cover the chicken generously without pooling too much at the bottom.
- Slow cook chicken: Cover and cook on high for 3-4 hours or on low for 6-8 hours until the chicken is cooked through and tender.
- Remove chicken: Take the chicken out of the slow cooker and set it aside. Note that the sauce may be thinner now due to liquid released by the chicken, but the chicken itself will have a thick layer of sauce on top.
- Wilt spinach: Turn the slow cooker to high if it isn’t already. Add the chopped fresh spinach to the slow cooker and stir for a few minutes until the spinach wilts and softens.
- Combine and serve: Return the chicken to the slow cooker, spoon the sauce, spinach, and sun-dried tomatoes over the top, or pour the mixture over the chicken when serving. Enjoy your creamy Tuscan Chicken.
Notes
- You can use fresh or bottled sun-dried tomatoes; if dry, rehydrate them in warm water before chopping.
- For a lower fat option, substitute the heavy cream with half-and-half or a lighter cream alternative.
- Adjust Italian seasoning to your taste; fresh herbs like basil or oregano can add extra flavor.
- This recipe is best served with pasta, rice, or a side of crusty bread to soak up the sauce.
- If you prefer a thicker sauce at the end, remove the lid from the slow cooker and cook on high for 15-20 minutes to reduce liquid before adding the spinach.
