Ingredients
Potatoes
- 4 large russet potatoes
- Extra-virgin olive oil (for rubbing)
Filling
- ½ cup milk
- ½ cup sour cream
- 4 tablespoons unsalted butter
- 2 garlic cloves, grated
- 1 teaspoon sea salt, plus more for sprinkling
- ½ teaspoon freshly ground black pepper
Topping
- 1 cup grated cheddar cheese
- ½ cup chopped green onions
Instructions
- Preheat and Prepare Potatoes: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Use a fork to pierce each potato a few times to allow steam to escape during baking.
- Bake Potatoes: Place the potatoes on the prepared baking sheet, rub each with olive oil to coat the skin evenly, then bake for 60 to 70 minutes or until they can be easily pierced with a fork and the skins are crisp.
- Cool and Scoop: Remove the potatoes from the oven and let them cool slightly until they are safe to handle. Slice each potato in half lengthwise, then carefully scoop out the flesh from each half, leaving approximately a ¼-inch border of potato attached to the skin to maintain its shape.
- Make Filling: Transfer the scooped potato flesh into a large bowl. Add milk, sour cream, unsalted butter, grated garlic, sea salt, and black pepper. Mash everything together until the mixture is smooth, creamy, and well combined.
- Fill Potato Skins: Arrange the empty potato skins cut side up on the baking sheet. Sprinkle the inside of each skin lightly with salt, then spoon the creamy potato mixture back into the skins, evenly filling each one.
- Add Cheese and Bake Again: Top the filled potatoes with grated cheddar cheese. Bake in the oven for an additional 15 to 25 minutes, or until the cheese is melted, bubbly, and beginning to brown slightly.
- Garnish and Serve: Remove the potatoes from the oven, sprinkle evenly with chopped green onions, season with additional salt and pepper if desired, and serve warm as a comforting side dish.
Notes
- Choose large russet potatoes for best texture and flavor.
- To make these ahead, prepare through step 5, then refrigerate. When ready to serve, top with cheese and bake until bubbly.
- For a richer flavor, add cooked bacon bits or a sprinkle of smoked paprika to the filling.
- Use Greek yogurt instead of sour cream for a tangier, lower-fat option.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven for best texture.
