  • Total Time: 55 minutes
  • Yield: 16 servings

Ingredients

Chocolate Base

  • 1 cup chocolate chips (melted, 188g)
  • 1 cup all purpose flour (133.75g)
  • 1/2 teaspoon sea salt (3g)
  • 1/4 teaspoon baking soda (1.25g)
  • 2 flax eggs (equivalent to 2 tablespoons flaxseed meal + 6 tablespoons water)
  • 3/4 cup brown sugar (raw brown sugar, cane sugar, or coconut sugar, 158g)
  • 6 tablespoons melted coconut oil (75g)
  • 1/4 cup water (60ml)
  • 1 teaspoon pure vanilla extract (5ml)

Peanut Butter Swirl

  • 1/4 cup peanut butter (64g)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (165°C). Grease an 8×8 inch (20×20 cm) square brownie pan, and optionally line it with parchment paper or foil for easy removal. Set aside.
  2. Melt Chocolate: Melt the chocolate chips by microwaving them for 1 minute, stirring, and then heating in 30-second increments until fully melted. Alternatively, melt the chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, sea salt, and baking soda until evenly combined. Set aside.
  4. Prepare Wet Ingredients: In a separate large bowl, whisk the flax eggs (flaxseed meal mixed with water), brown sugar, and melted coconut oil for about 2 minutes until well combined. Add the water and vanilla extract, and mix thoroughly.
  5. Combine Mixtures: Pour the dry flour mixture and melted chocolate into the wet ingredients. Stir until just combined and smooth, ensuring not to overmix the batter.
  6. Pour Batter: Transfer the batter into the prepared brownie pan and spread evenly.
  7. Add Peanut Butter Swirls: Warm the peanut butter in the microwave for about 15 seconds until it is runny. Drop spoonfuls of peanut butter evenly over the brownie batter. Using a knife or skewer, gently swirl the peanut butter through the batter by moving the knife left to right and up and down to create a marbled effect without overmixing.
  8. Bake: Bake in the preheated oven for 40–45 minutes. The center may be slightly wobbly but will firm up as it cools.
  9. Cool and Serve: Carefully remove the brownies from the oven and allow them to cool completely to room temperature before cutting into 16 squares. Enjoy your vegan chocolate peanut butter swirl brownies!

Notes

  • Flax eggs are made by mixing 2 tablespoons of flaxseed meal with 6 tablespoons of water; let it sit for 5 minutes to thicken.
  • You can use raw brown sugar, cane sugar, or coconut sugar depending on preference.
  • For a smoother swirl, warm peanut butter slightly to make it easier to swirl through the batter.
  • Don’t over-swirl or the peanut butter will mix too much with the batter and lose the marbled effect.
  • Letting the brownies cool completely before cutting helps them set and prevents crumbling.
