A hearty and flavorful Vegan Pozole Rojo recipe featuring tender soy curls, smoky chipotle and ancho chiles, creamy hominy, and classic Mexican seasonings, served with fresh toppings for an authentic and satisfying plant-based soup.

  • Total Time: 1 hour 3 minutes
  • Yield: 14 servings

Ingredients

For Soy Curls:

  • 1 ½ cup unsalted vegetable stock
  • 1 ¼ cup soy curls
  • 2 teaspoons olive oil
  • 4 teaspoon chipotle peppers in adobo sauce (minced)

For Chile Base:

  • 2 dried ancho chiles
  • 2 dried guajillo chiles
  • 2 dried pasilla chiles
  • 3 dried chipotle chiles
  • 3 cups boiling water

For Soup Base:

  • 4 teaspoons olive oil
  • 1 cup onion (diced)
  • 1 tablespoon garlic (minced)
  • 1 cup tomato (diced)

Main Soup Ingredients:

  • 6 cups unsalted vegetable stock
  • 29 oz. canned white hominy (drained and rinsed)
  • 15.5 oz. canned white beans (drained – great northern or cannellini beans)
  • 1 teaspoon oregano
  • 1 tablespoon brown sugar
  • 4 teaspoons lime juice
  • 2 ¼ teaspoons salt (or to taste)

Toppings:

  • 1 cup cabbage (shredded)
  • 2 red radishes (thinly sliced)
  • 1 avocado (diced)
  • Lime wedges
  • ¼ cup cilantro leaves
  • ¼ cup white onion (minced)

Instructions

  1. Hydrate Soy Curls: Bring 1 ½ cup vegetable stock to a boil and pour it over 1 ¼ cup soy curls. Let stand for 10 minutes until hydrated, then drain and press out excess liquid. Set aside.
  2. Cook Soy Curls: Heat 2 teaspoons olive oil in a wide skillet over medium heat for 90 seconds. Add the drained soy curls in an even layer and cook 6-7 minutes, stirring occasionally, until golden on most sides.
  3. Add Chipotle Peppers: Stir in 4 teaspoons minced chipotle peppers and cook for 1 minute to coat soy curls evenly. Transfer to a bowl and set aside.
  4. Toast Dried Chiles: Remove seeds and stems from ancho, guajillo, pasilla, and chipotle chiles. Toast them in a skillet or comal over medium-high heat for a couple of minutes on each side until fragrant and pliable.
  5. Soak Chiles: Place toasted chiles in a heatproof bowl, pour 3 cups boiling water over to fully submerge, cover with a plate, and let soak for 15 minutes until softened.
  6. Blend Chile Sauce: Drain chiles, reserving 1 cup soaking liquid. Blend chiles with the reserved liquid until smooth. Set aside.
  7. Sauté Aromatics: Heat 4 teaspoons olive oil in a large pot over medium heat for 90 seconds. Add 1 cup diced onion and cook for 5 minutes, stirring frequently until softened.
  8. Add Garlic, Tomato, and Chile Base: Stir in 1 tablespoon minced garlic, 1 cup diced tomato, and the blended chile sauce. Cook 3-4 minutes until mixture slightly thickens.
  9. Add Main Ingredients and Simmer: Add 6 cups vegetable stock, 29 oz. hominy, 15.5 oz. beans, 1 teaspoon oregano, 1 tablespoon brown sugar, 4 teaspoons lime juice, and salt. Bring to a steady simmer, then reduce heat to medium-low and cook for 20 minutes, stirring occasionally.
  10. Blend Part of the Soup: Remove about ¼ of the soup and blend until smooth, then return it to the pot and stir in the cooked soy curls.
  11. Serve with Toppings: Portion soup into bowls and top with shredded cabbage, thinly sliced radishes, diced avocado, lime wedges, cilantro, and minced white onion. Serve hot.

Notes

  • Soy curls are a great meat substitute, providing texture similar to shredded chicken in this vegan pozole.
  • Adjust chipotle peppers in adobo according to your preferred heat level.
  • Removing seeds from chiles reduces bitterness and ensures smooth chile sauce.
  • Blending a portion of the soup thickens the broth and adds depth.
  • Serve immediately to enjoy the freshness of the toppings and vibrant flavors.
