Ingredients
Donut Batter
- 2 cups all purpose flour
- 1 cup light brown sugar (packed)
- 2 teaspoons baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/2 cup melted vegan butter
- 1 cup pumpkin puree
- 1/2 cup oat milk
- 2 teaspoons pure vanilla extract
Maple Cinnamon Glaze
- 1 1/2 cups powdered sugar
- 4 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
- 2-4 tablespoons oat milk
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees F and spray a donut pan with non-stick spray to ensure the donuts release easily after baking.
- Mix Dry Ingredients: In a large bowl, whisk together the all purpose flour, light brown sugar, baking powder, pumpkin pie spice, and salt until well combined.
- Add Wet Ingredients: Pour in the melted vegan butter, pumpkin puree, oat milk, and vanilla extract. Mix everything together thoroughly with a large spoon until the batter is smooth and well combined.
- Fill the Donut Pan: Spoon the batter into each cavity of the donut pan up to the top, or use a piping bag to reduce mess and ensure even filling.
- Bake the Donuts: Place the pan in the preheated oven and bake for 10-12 minutes, or until the edges are lightly browned and the donuts spring back when touched. Baking time may vary based on the donut pan size.
- Prepare the Maple Cinnamon Glaze: In a medium bowl, whisk together powdered sugar, maple syrup, and ground cinnamon. Gradually add oat milk one teaspoon at a time to reach a runny glaze consistency similar to corn syrup, or thicker if preferred.
- Glaze the Donuts: Once the donuts have slightly cooled, dip them into the glaze and place them on a wire rack set over parchment paper to catch any drips. Serve immediately or allow the glaze to set for about 15 minutes before enjoying.
Notes
- Use a piping bag to fill the donut pan for cleaner edges and uniform shapes.
- Adjust the oat milk in the glaze to achieve your preferred consistency.
- Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- You can substitute pumpkin pie spice with a mix of cinnamon, nutmeg, ginger, and cloves if unavailable.
- Ensure the donuts cool slightly before dipping in glaze to prevent melting.
