This vegan Tofu Deli Meat recipe transforms high-protein tofu into thin, flavorful slices that mimic deli-style meat. Marinated in a smoky, savory blend and baked until crispy at the edges, this affordable and versatile plant-based option is perfect for sandwiches and wraps.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Tofu Marinade and Slices

  • 1 (16oz) package high-protein tofu
  • 1/2 cup vegetable broth
  • 2 tablespoons Bragg’s Liquid Aminos (or tamari or soy sauce)
  • 1 tablespoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 dash cayenne pepper (optional for spice)

For Baking

  • 2 tablespoons light olive oil (or other neutral-flavored oil)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the tofu slices.
  2. Prepare Tofu: Drain the block of high-protein tofu and pat it dry thoroughly with paper towels to remove excess moisture. Using a mandoline or vegetable peeler, shave the tofu into thin, deli-meat-like slices, then place these slices into a shallow container for marinating.
  3. Make Marinade: In a separate bowl, combine the vegetable broth, Bragg’s Liquid Aminos (or tamari or soy sauce), liquid smoke, smoked paprika, garlic powder, and a dash of cayenne pepper if you want a bit of heat. Stir well until fully blended.
  4. Marinate Tofu: Pour the marinade over the shaved tofu slices, ensuring they are well-coated. Let the tofu soak in the marinade for at least 10 minutes, though for best flavor you can refrigerate and marinate it up to 2 days.
  5. Prepare Baking Sheet: Grease a sheet pan with 2 tablespoons of light olive oil or your choice of neutral-flavored oil to prevent sticking and help with crisping.
  6. Bake Tofu: Spread the marinated tofu slices evenly on the greased sheet pan, including the leftover marinade liquid. Bake at 400°F (204°C) for 30-35 minutes, flipping the slices halfway through at about 15 minutes. Bake until most of the marinade liquid is absorbed and the edges of the tofu become crispy.
  7. Serve or Store: Use the baked tofu deli meat immediately in sandwiches and wraps, or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • For best texture, slice tofu as thinly as possible using a mandoline or peeler.
  • Marinating longer enhances the smoky and savory flavors.
  • Flip tofu slices halfway through baking to ensure even crisping.
  • This tofu deli meat is perfect for vegan sandwiches, wraps, or salads.
  • Store leftovers properly refrigerated in a sealed container and consume within 5 days for optimal freshness.
