Ingredients
Sauce
- 3 Tablespoons Soy Sauce
- 1 Tablespoon Rice Vinegar
- 2 Teaspoons Chili Sauce (e.g., Sriracha)
- 1/2 Tablespoon Sugar
Vegetables
- 2/3 cup Carrot (cut into matchsticks)
- 1 cup Green Cabbage (shredded)
- 3 Green Onions (separated into bulb and stalks, sliced separately)
Noodles and Aromatics
- 7 ounces Lo Mein Noodles
- 2 Tablespoons Oil (vegetable or canola)
- 1 Tablespoon Ginger + Garlic (finely chopped or minced)
- 2 Tablespoons Water
Instructions
- Prepare the sauce: In a small bowl, combine soy sauce, rice vinegar, chili sauce, and sugar. Stir well until the sugar dissolves, then set aside.
- Prepare the vegetables: Shred the green cabbage, cut the carrots into thin matchsticks, and slice the green onion bulbs and stalks separately to use at different stages.
- Cook the noodles: Bring a pot of water to a boil. Add the lo mein noodles and cook for about 3 minutes or according to package instructions until they are halfway cooked to avoid mushiness during stir-frying. Drain and set aside.
- Stir-fry ginger, garlic, and onion bulbs: Heat oil in a wok or large pan over low heat. Add the minced ginger, garlic, and sliced green onion bulbs. Stir-fry briefly until fragrant.
- Cook the vegetables: Increase the heat to high and add the shredded cabbage and carrot matchsticks. Stir-fry for 1 to 2 minutes until the vegetables are slightly softened but still crisp.
- Add the noodles: Add the cooked noodles to the pan and toss them gently to combine with the vegetables and aromatics.
- Stir-fry with sauce: Pour the prepared sauce and 2 tablespoons of water over the noodles and vegetables. Stir-fry on high heat for about 2 minutes, ensuring the ingredients are evenly coated and heated through but not overcooked. Avoid letting the mixture stick to the pan.
- Finish and serve: Top the chow mein with the sliced green onion stalks, mix lightly, and serve hot immediately.
Notes
- You can prepare fresh ginger and garlic mince or use store-bought paste for convenience.
- Cooking noodles halfway helps maintain their texture during stir-frying to prevent mushiness.
- Use high heat during stir-frying to get a nice texture while keeping vegetables crisp.
- Adjust chili sauce quantity to your heat preference.
- Lo mein noodles can be substituted with egg noodles or spaghetti in a pinch.
