These Veggie-Loaded Mini Meatloaves are a delicious and nutritious twist on classic meatloaf, featuring ground beef, chicken, or turkey combined with a medley of finely chopped vegetables like mushrooms, carrot, spinach, and onion. Perfectly portioned in muffin tins, these mini meatloaves bake quickly and offer a flavorful, family-friendly meal that’s easy to prepare and enjoy with your favorite sides.

  • Total Time: 45 minutes
  • Yield: 16 servings

Ingredients

Main Ingredients

  • 2 pounds ground beef, chicken, or turkey
  • 1 teaspoon salt
  • Black pepper to taste
  • 2 large eggs
  • 1 medium onion, peeled and finely chopped
  • 2 cups finely chopped mushrooms (any kind)
  • 1/2 cup finely chopped or grated carrot
  • 2 cups loosely packed spinach, finely chopped
  • 1 teaspoon dried thyme
  • 2-3 cloves garlic, peeled and minced
  • 1 1/2 tablespoons Dijon mustard

For Preparation

  • Oil for greasing muffin tin

Instructions

  1. Preheat the Oven: Preheat your oven to 350℉ (175℃) and grease a muffin tin with a little oil to prevent the mini meatloaves from sticking during baking.
  2. Mix Ingredients: In a large bowl, combine ground meat of your choice, salt, black pepper, eggs, finely chopped onion, mushrooms, carrot, spinach, dried thyme, minced garlic, and Dijon mustard. Use freshly washed hands or a large spoon to mix everything evenly until well blended.
  3. Portion Meat Mixture: Using a 1/4 cup measuring cup, scoop out portions of the meat mixture and place them evenly into the prepared muffin tin cups. Press the mixture gently down with the back of the measuring cup to form compact mini meatloaves.
  4. Bake the Meatloaves: Place the muffin tin in the preheated oven and bake for 25 to 30 minutes, or until the meat is thoroughly cooked and an internal temperature of 160°F (71°C) is reached. The meatloaves will release some water as they cook, which is normal.
  5. Serve: Serve the mini meatloaves warm alongside rice, potatoes, salad, or your choice of roasted vegetables for a balanced meal.
  6. Store Leftovers: Allow the meatloaves to cool completely before storing. Keep leftovers refrigerated for up to 3 days or freeze for up to 1 month for later enjoyment.
