Ingredients
Primary Ingredients
- 24 ounces Shamrock Farms Original Cottage Cheese (4% milkfat)
- 1/3 cup honey
- 20 ounces canned crushed pineapple in juice (reserve 1/2 cup juice)
- 5 teaspoons unflavored gelatin powder (2 pouches)
- 1 ounce package freeze dried strawberries
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 3 cups frozen raspberries
Instructions
- Prepare Pineapple and Cottage Cheese Mixture: Strain the canned crushed pineapple, reserving 1/2 cup of the juice. In a large mixing bowl, combine the crushed pineapple, honey, and cottage cheese. Stir gently and set aside to prepare the gelatin mixture.
- Dissolve Gelatin: In a small microwave-safe bowl, combine the unflavored gelatin powder with the reserved 1/2 cup of pineapple juice. Microwave for about 45 seconds or until it reaches boiling point, watching carefully to prevent boiling over. Stir well to dissolve the gelatin completely, then incorporate this mixture into the cottage cheese and pineapple bowl, stirring thoroughly to combine.
- Prepare Strawberry Powder: Using a food processor, pulse the freeze-dried strawberries until you achieve a fine powder. Add this strawberry powder to the cottage cheese gelatin mixture, stirring well to evenly distribute the flavor.
- Whip Heavy Cream: In a separate bowl, whip the heavy cream along with the vanilla extract until stiff peaks form, approximately 2 to 3 minutes. This will create a light and fluffy texture that complements the salad.
- Combine and Chill: Gently fold the whipped cream into the cottage cheese mixture until fully combined without deflating the cream. Stir in the frozen raspberries carefully to retain their shape. Pour the mixture into a serving dish and refrigerate for 1 to 2 hours to allow it to set and flavors to meld.
- Serve and Garnish: Once chilled, serve the Very Berry Fluffy Salad garnished with fresh berries and mint leaves if desired for an added fresh touch and visual appeal.
Notes
- Ensure the gelatin is fully dissolved before adding to avoid lumps.
- Folding the whipped cream gently keeps the salad light and fluffy.
- Use fresh mint leaves for garnish to enhance aroma and presentation.
- Can be prepared a day in advance and kept refrigerated.
- For a dairy-free version, substitute cottage cheese and heavy cream with plant-based alternatives.
