Ingredients
Salad
- 4 Persian cucumbers, thinly sliced
- ⅓ cup fresh cilantro, chopped
- ½ red onion, finely diced
- 1½ cups frozen corn, thawed
- 1 tbsp elote seasoning
- Avocado oil or cooking spray, for cooking
Dressing
- 1 cup full-fat cottage cheese
- 3 tbsp Cotija cheese, grated
- Juice of 1 lime
- 2 tsp elote seasoning
- 2 cloves garlic
Instructions
- Prepare the skillet and corn: Heat a large nonstick skillet over medium heat and lightly coat it with avocado oil or cooking spray. Add the thawed corn and 1 tablespoon elote seasoning. Cook for 6–7 minutes, stirring occasionally, until the corn is lightly charred, roasted, and fragrant. Remove from heat and let cool slightly.
- Mix the salad base: In a large bowl, combine the thinly sliced cucumbers, chopped fresh cilantro, and finely diced red onion. Add the roasted corn to the bowl and toss everything together to combine evenly.
- Make the dressing: In a blender or food processor, add the full-fat cottage cheese, grated Cotija cheese, lime juice, 2 teaspoons elote seasoning, and garlic cloves. Blend until the mixture is completely smooth and creamy.
- Adjust seasoning: Taste the dressing and adjust seasoning or add more lime juice if desired to suit your preference.
- Combine and serve: Pour the creamy dressing over the salad ingredients and toss thoroughly to ensure all components are evenly coated. Serve immediately or chill in the refrigerator before serving for a cooler, more refreshing experience.
Notes
- Use Persian cucumbers for their thin skin and fewer seeds, but English cucumbers work as well.
- Elote seasoning can be found in most grocery stores or easily made at home using a mix of chili powder, cumin, paprika, garlic powder, and salt.
- For a vegan substitute, replace cottage cheese and Cotija with blended silken tofu and nutritional yeast, respectively.
- This salad is best served fresh but can be refrigerated for up to 1 day; longer storage might affect texture.
- Adjust the lime juice and seasoning according to taste for more tangy or spicy flavors.
