Ingredients
For Roasted Figs
- 1 tablespoon olive oil
- 2 teaspoons balsamic vinegar
- 1 tablespoon honey
- Pinch of kosher salt
- 15 fresh figs, stemmed and halved
For Whipped Goat Cheese
- 10 ounces goat cheese, softened at room temperature
- 4 ounces cream cheese, softened at room temperature
- 2 tablespoons honey
- 1/4 teaspoon kosher salt
For Serving
- Toasted bread
- Chopped toasted walnuts or almonds
- Chopped fresh rosemary
- Flaky sea salt
Instructions
- Preheat the oven: Preheat your oven to 400 degrees F and line a baking sheet with parchment paper to prepare for roasting the figs.
- Prepare balsamic glaze: In a small bowl, combine the olive oil, balsamic vinegar, 1 tablespoon honey, and a pinch of kosher salt, stirring well to create the glaze for the figs.
- Arrange and drizzle figs: Place the halved figs cut side up in rows on the prepared baking sheet and drizzle evenly with the balsamic glaze mixture.
- Roast figs: Roast the figs in the oven for 15-20 minutes, until they become soft and jammy in texture. Remove from oven and allow them to cool to room temperature.
- Whip the goat cheese mixture: In a food processor or using a stand mixer fitted with a paddle attachment, blend the goat cheese, cream cheese, 2 tablespoons honey, and 1/4 teaspoon kosher salt until smooth and fully combined, about 1 minute.
- Assemble the toasts: Spread a generous layer of whipped goat cheese onto toasted bread slices. Spoon the roasted figs evenly over the cheese layer.
- Garnish and serve: Sprinkle the assembled toasts with chopped toasted walnuts or almonds, fresh rosemary, and a pinch of flaky sea salt. Serve immediately.
Notes
- Use fresh, ripe figs for the best flavor and texture when roasting.
- Softening the goat cheese and cream cheese at room temperature ensures a smooth, creamy whipped mixture.
- Toasting nuts enhances their flavor and adds a delightful crunch; you can use walnuts or almonds based on preference.
- This appetizer pairs wonderfully with a crisp white wine or sparkling beverage for entertaining.
- Leftover whipped goat cheese can be stored in an airtight container in the refrigerator for up to 3 days.
