This White Texas Sheet Cake is a classic Southern dessert featuring a moist, tender cake with a thin, tender crumb and a rich almond-flavored frosting. The cake is quick to prepare with a simple batter that is poured onto a large sheet pan, baked until golden, and topped with a creamy almond frosting that sets beautifully over the warm cake, making it perfect for gatherings and celebrations.

  • Total Time: 30 minutes
  • Yield: 24 servings

Ingredients

Cake Ingredients

  • 1 cup unsalted butter
  • 1 cup water
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 eggs, beaten
  • 1/2 cup sour cream
  • 1 teaspoon almond extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Frosting Ingredients

  • 1/2 cup unsalted butter
  • 1/3 cup milk
  • 4 cups powdered sugar
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 375 degrees F. Line a 15-inch by 10-inch by 1-inch baking sheet with parchment paper or lightly grease the pan to ensure the cake does not stick.
  2. Make the batter: In a small saucepan, bring the butter and water to a boil. Meanwhile, in a large mixing bowl, combine the flour and sugar. Next, add the beaten eggs, sour cream, almond extract, baking soda, and salt to the dry ingredients. Slowly pour the boiling butter and water mixture into the bowl, stirring continuously until the batter is well combined. Note that the batter will be very thin.
  3. Bake the cake: Pour the thin batter evenly into the prepared baking sheet. Bake in the preheated oven for 18-22 minutes, or until the cake turns a golden brown color. Once baked, allow the cake to cool for about 10 minutes. The cake should still be slightly warm when you add the frosting so it spreads smoothly.
  4. Prepare the frosting: In a large saucepan, combine the butter and milk. Bring this mixture to a boil over medium heat, then remove from heat immediately. Stir in the powdered sugar and almond extract until the frosting is smooth and fully combined.
  5. Frost the cake: Spread the warm frosting evenly over the warm cake. The frosting will thicken quickly, so work fast to cover the cake before it sets. Allow the frosting to set before cutting the cake into squares to serve.

Notes

  • The batter will be quite thin, which is normal for this recipe.
  • Applying the frosting while the cake is still warm helps it to spread easily and results in a thinner, tender frosting layer.
  • You can substitute vanilla extract for almond extract if preferred.
  • Ensure the cake does not overbake to maintain its moistness; watch closely after 18 minutes.
  • Use parchment paper for easier removal and cleaner edges.
