Ingredients
For the Chicken and Sauce
- 1/2 cup Dijon mustard (no substitutes, PLEASE read notes below)
- 1/4 cup pure maple syrup (no substitutes. No Aunt Jemima, fake maple syrup)
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 pounds boneless skinless chicken thighs (most of the fat cut and discarded)
For Thickening and Garnish
- 1 tablespoon cornstarch
- 2 teaspoons fresh rosemary (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 450°F (232°C). Line an 8×8 inch oven-proof pan with two layers of tin foil to prevent sticking and make cleanup easier.
- Prepare Sauce: In a small bowl, whisk together the Dijon mustard, pure maple syrup, salt, and ground black pepper until fully combined, forming a smooth glaze for the chicken.
- Coat Chicken: Place the trimmed chicken thighs in the foil-lined pan, then pour the mustard-maple mixture over the chicken. Turn the chicken pieces around in the glaze to ensure each piece is completely coated.
- Bake Chicken: Bake the chicken uncovered in the preheated oven for 40 minutes, allowing the glaze to caramelize and the chicken to cook through.
- Rest Chicken: Remove the pan from the oven and let the chicken rest for 5 minutes. Carefully transfer the chicken to a serving plate, keeping the cooking liquid in the pan.
- Thicken Sauce: Immediately whisk the tablespoon of cornstarch into the hot liquid in the pan to create a thick, glossy sauce. If it doesn’t thicken after the first tablespoon, add a little more cornstarch. This step must be done while the liquid is hot to ensure proper thickening.
- Garnish and Serve: Drizzle the thickened sauce over the plated chicken and sprinkle fresh rosemary on top before serving for an aromatic finish.
Notes
- Use Dijon mustard specifically as it provides the right tangy flavor; other mustards may alter the intended taste.
- Pure maple syrup is critical for authentic flavor and natural sweetness. Avoid imitation syrups for the best result.
- Removing most of the fat from chicken thighs reduces greasiness and keeps the dish lighter.
- Mix the cornstarch into the hot liquid immediately after baking to ensure the sauce thickens properly.
- This dish pairs wonderfully with simple sides such as roasted vegetables or steamed rice to soak up extra sauce.
