Delicious and nutritious Zucchini, Apple, and Berry Roll-ups that combine the natural sweetness of fruits with the goodness of vegetables, dried into a flavorful and healthy snack. These roll-ups are easy to make using either a dehydrator or a low-temperature oven, perfect for a wholesome treat that’s great for kids and adults alike.

  • Total Time: 7 hours 15 minutes
  • Yield: 4 servings

Ingredients

Fruits

  • 1kg apples
  • 500g berries (fresh or frozen)

Vegetables

  • 300g vegetables (zucchini, carrots, beetroot, or pumpkin)

Optional Ingredients

  • 3 Tbsp coconut cream
  • 1-2 Tbsp maple syrup or honey

Instructions

  1. Prepare the apples and vegetables: Chop and core the apples, leaving the skin on for extra nutrients. Place them in a saucepan, cover with water, bring to a boil, and cook for about 5 minutes until just tender. Cook any hard vegetables like carrots, beetroot, or pumpkin until tender as well to ensure smooth blending and enhanced sweetness.
  2. Blend the base mixture: Transfer the cooked apples and vegetables to a blender and blend until smooth. Add fresh or frozen berries and any soft vegetables like zucchini that don’t require cooking. Blend everything together until fully combined.
  3. Adjust sweetness and texture: Taste the mixture and add maple syrup or honey if additional sweetness is desired. Blend in the coconut cream to add richness and creaminess to the mixture.
  4. Spread the mixture for drying: Spread the puree onto dehydrator sheets or use baking paper-lined oven trays. Aim for an even layer approximately 5mm thick to ensure consistent drying.
  5. Dry the roll-ups: Dry the mixture in a dehydrator or a low oven set at approximately 60°C (140°F). Drying at a low temperature helps retain more nutrients from the raw fruits and vegetables.
  6. Optional speed-up drying: You may slightly increase the oven temperature to speed up the drying process, but lower temperatures are preferable for nutrient preservation.
  7. Cut and store: Once the roll-ups are completely dry to touch and pliable, cut them into strips. Store the strips in an airtight container to maintain freshness and texture.

Notes

  • The skin of the apples is left on to increase fiber and nutrients.
  • Hard vegetables should be cooked before blending to ensure smooth texture.
  • Using a dehydrator preserves more nutrients compared to oven drying.
  • If you increase oven temperature to dry faster, some nutrient loss may occur.
  • Sweeteners like maple syrup or honey are optional depending on your desired sweetness.
  • Coconut cream adds richness but can be omitted for a lighter version.
  • Store roll-ups in an airtight container to keep them fresh and chewy.
