This comforting Zucchini Casserole features tender zucchini slices baked in a creamy, flavorful sauce with a blend of parmesan and cheddar cheeses, garlic, and herbs. Perfect as a cozy side dish or light main course, it’s easy to prepare and satisfying for the whole family.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Zucchini and Seasoning

  • 2 to 4 zucchini (sliced into half moons about 1/4-inch thick; about 6 cups total)
  • ¼ teaspoon salt

Cream Sauce

  • ⅓ cup heavy cream
  • 3 whole eggs
  • ¼ cup grated parmesan cheese
  • 3 to 4 cloves garlic (minced)
  • 1 teaspoon dried basil
  • ¼ teaspoon freshly ground black pepper (or to taste)
  • ⅛ teaspoon ground nutmeg

Cheese and Butter

  • 1½ cups shredded cheddar cheese (divided)
  • 2 tablespoons butter (sliced into 1/4-inch thick pieces)

Garnish

  • Chopped fresh parsley (for garnish)

Instructions

  1. Prep. Preheat the oven to 350˚F and grease a 9-inch baking dish with butter. Add the sliced zucchini to the baking dish, sprinkle with salt, mix to combine, and set aside to allow the salt to draw out moisture.
  2. Combine the cream sauce ingredients. In a mixing bowl, whisk together the heavy cream, eggs, parmesan cheese, minced garlic, dried basil, freshly ground black pepper, and ground nutmeg until smooth and well combined.
  3. Add cheese and cream sauce. Sprinkle ½ cup of shredded cheddar cheese evenly over the zucchini in the baking dish. Then, pour the prepared cream sauce mixture over the zucchini and cheese. Scatter the sliced butter pieces evenly on top.
  4. Bake. Place the casserole in the preheated oven and bake for 25 minutes, allowing the sauce to set and the zucchini to begin cooking through.
  5. Add cheese and continue to bake. Remove the casserole from the oven and sprinkle the remaining shredded cheddar cheese over the top. Return it to the oven and bake for an additional 7 to 10 minutes, until the casserole is bubbly, the cheese is browned, and the zucchini is tender.
  6. Finish and serve. Remove the casserole from the oven and let it rest for 10 to 15 minutes to set. Garnish with chopped fresh parsley, then cut into portions and serve warm.

Notes

  • Slicing the zucchini into uniform 1/4-inch half moons ensures even cooking.
  • Allow the casserole to rest after baking for better texture and easier slicing.
  • You can substitute part of the cheddar cheese with mozzarella for a milder flavor and extra gooey texture.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Ensure the baking dish is greased well to prevent sticking.
