Ingredients
For the rims + garnish:
- 2 tablespoons granulated sugar or coconut sugar
- 1 tablespoon ground cinnamon
- Apple slices for garnish
Version with more apple taste:
- 3 1/4 cups (767 ml) apple cider, plus extra for dipping rims
- 1 demi bottle (375 ml) sparkling white wine
Version with more sparkling wine taste:
- 2 1/2 cups (590 ml) apple cider, plus extra for dipping rims
- 2 1/2 cups (590 ml) sparkling white wine
Instructions
- Prepare cinnamon sugar rim: Mix together the cinnamon and sugar on a small plate until combined. The cinnamon sugar mixture should be about 1/4 inch high and wider than the rim of the glass you’ll be using.
- Prepare rims: Pour a little apple cider into a shallow bowl or saucer. Dip the champagne flutes in the cider to wet the rims, then immediately dip them in the cinnamon sugar mixture to coat the edges thoroughly.
- Build the mimosa (apple-forward version): Fill each cinnamon-sugar rimmed champagne flute about two-thirds full with apple cider (approximately 127 ml or 8.5 tablespoons per glass). Top off gently with sparkling white wine (about 60 ml or 1/4 cup per glass).
- Build the mimosa (wine-forward version): Alternatively, fill each glass half full with apple cider and then top with an equal part of sparkling white wine to give a stronger wine flavor.
- Garnish and serve: Add a fresh apple slice to each glass for garnish and serve immediately while the drink is chilled and bubbly.
Notes
- You can use regular granulated sugar or coconut sugar according to your preference.
- Adjust the ratio of apple cider to sparkling wine depending on whether you prefer a sweeter or more wine-forward cocktail.
- Use chilled apple cider and sparkling wine for the best refreshing taste.
- Serve immediately to maintain the carbonation of the sparkling wine.
- For a non-alcoholic version, substitute sparkling white wine with sparkling water or non-alcoholic sparkling cider.
