A delicious and comforting BBQ Chicken Grilled Cheese Sandwich featuring shredded roasted chicken tossed in savory BBQ sauce, melted Havarti cheese, and garlicky parsley buttered sourdough bread, pan-cooked to golden perfection.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

BBQ Chicken

  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 ½ cups shredded roasted chicken
  • ½ teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 cup BBQ sauce

Garlic Butter Bread

  • 12 slices Havarti cheese
  • ¼ cup butter
  • 2 cloves garlic, minced
  • 2 teaspoons parsley, minced
  • 12 slices sourdough bread or sturdy white bread

Instructions

  1. Prepare BBQ Chicken: Heat olive oil in a large skillet over medium heat. Add sliced red onions and cook until soft, about 2 minutes. Stir in minced garlic and cook for 30 seconds until fragrant. Add shredded roasted chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir well to combine and cook for an additional 2-3 minutes until fully heated through.
  2. Make Garlic Butter: In a medium bowl, combine butter, minced garlic, and minced parsley. Microwave just until the butter melts and the ingredients are blended together.
  3. Butter the Bread: Lay out all 12 slices of sourdough bread on a work surface. Spread the melted garlic butter mixture evenly over one side of each bread slice.
  4. Assemble Sandwiches: Flip 6 buttered bread slices over so the buttered side is down. Place one slice of Havarti cheese on each. Evenly distribute the BBQ chicken mixture on top of the cheese, then add another slice of Havarti cheese on top of the chicken. Top each with the remaining 6 slices of bread, buttered side facing up.
  5. Cook the Sandwiches: Heat a large non-stick skillet over medium heat. Place the prepared sandwiches in the skillet. Cook until the bottom side is golden brown, about 3 to 5 minutes. Carefully flip the sandwiches, reduce heat to medium-low, and cook another 3 to 5 minutes until the bottom is browned and the cheese is fully melted.

Notes

  • Use sturdy bread like sourdough or white sandwich bread to hold the filling well without becoming soggy.
  • Adjust the amount of BBQ sauce based on your preferred level of tanginess and moisture.
  • Have the heat at medium-low on the second side to prevent burning while allowing cheese to melt thoroughly.
  • For extra crispiness, you can press the sandwiches gently with a spatula while cooking.
