Ingredients
Proteins
- 1 lb filet mignon, 2 steaks, each 1 1/2” thick
- 12 oz large shrimp, peeled, deveined, tail-on (21-25 count)
Seasonings
- 1 1/4 tsp fine sea salt, divided, or to taste
- 3/4 tsp black pepper, divided, or to taste
Cooking Fats & Aromatics
- 1/2 Tbsp vegetable oil, or any high heat cooking oil
- 3 Tbsp unsalted butter
- 2 garlic cloves, peeled and quartered
- 1 sprig fresh rosemary
Instructions
- Prepare and Season: Pat dry both the shrimp and filet mignon steaks thoroughly using paper towels. Just before cooking, season the steaks with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Season the shrimp separately with 1/4 teaspoon salt and 1/4 teaspoon black pepper or to taste.
- Heat the Skillet: Place a large cast-iron skillet over medium-high heat. Allow it to heat until it just begins to smoke. Once hot, add 1/2 tablespoon of vegetable or high heat cooking oil and swirl the pan to coat evenly.
- Sear the Steaks: Add the steaks to the skillet. Sear for 4 minutes on one side without moving them to develop a good crust. Flip the steaks and sear for an additional 3-4 minutes on the second side. Then, use tongs to turn the steaks onto their edges to render fat and sear the sides for about 30-60 seconds each. Remove steaks from the skillet when the internal temperature is about 10 degrees below your desired doneness as they will continue to cook while resting. Transfer steaks to a plate, tent with foil, and let rest.
- Add Butter and Aromatics: Reduce heat to medium. Immediately add 3 tablespoons of unsalted butter, the quartered garlic cloves, and the rosemary sprig to the skillet to infuse the butter with flavor.
- Cook the Shrimp: Add the seasoned shrimp to the skillet, spreading them out in a single layer. Sauté the shrimp for about 1 minute per side or until they turn pink, opaque, and are cooked through. Remove skillet from heat immediately afterward to avoid overcooking.
- Combine and Serve: Return the rested steaks to the skillet with the shrimp. Spoon the garlic rosemary butter over the steak and shrimp to coat them in the flavorful pan sauce. Serve drizzled with additional pan sauce for a rich finish.
Notes
- For best results, let the steaks rest after cooking to retain juices and allow the temperature to even out.
- The cast-iron skillet is ideal for achieving a perfect sear and even heat distribution.
- The shrimp cook quickly; avoid overcooking to keep them tender and juicy.
- You can adjust the garlic and rosemary quantities to taste for more or less intense flavor.
- Use a meat thermometer to monitor steak doneness accurately.
